Dhecha chilli chutney is a spicy and tangy dip made with fresh green or red chili peppers, coriander leaves, garlic, ginger, cumin, salt and lemon juice. It is a popular condiment in Indian and Nepalese cuisine and is traditionally served with snacks such as samosas, pakoras, and kebabs. This chutney can be made in various ways, some people add tomator onion, sugar, peanuts or mustard oil to enhance the taste and texture. It is a great accompaniment to grilled or roasted meats and vegetables as well.
Here's the Dhuska recipe:
Ingredients:
- 2 cups rice flour
- 1/2 cup chana dal (Bengal gram)
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2-3 dried red chillies
- 1/2 tsp grated ginger
- Salt to taste
- Oil for frying
Instructions:
1. Wash the chana dal and soak it in water for 2 hours.
2. Drain the water from the dal and grind it coarsely.
3. In a pan, dry roast the cumin seeds, coriander seeds, and red chillies until fragrant.
4. Grind the roasted spices into a fine powder.
5. In a bowl, mix the rice flour, ground dal, spice powder, grated ginger, and salt.
6. Add enough water to make a thick batter. The consistency should be similar to that of pakora or vada batter.
7. Heat oil in a deep frying pan.
8. Take a ladleful of batter and drop it into the hot oil. Fry on medium heat until golden brown and crispy.
9. Drain on a paper towel.
10. Serve hot with green chutney or tomato ketchup.
DHECHA- green chutney recepie
- 10-12 Dhecha chillies
- 1/2 cup chopped fresh coriander leaves
- 2-3 cloves of garlic
- Salt to taste
- 1 tsp cumin seeds
- 1 tsp lemon juice
- 1 tsp oil
Instructions:
1. Wash the Dhecha chillies and remove the stems.
2. Place them in a blender along with the chopped coriander leaves and garlic cloves.
3. Add salt and cumin seeds to the blender and grind until you get a smooth paste.
4. Transfer the chutney to a bowl and transfer the oiled tempering over it.
5. Finally, add lemon juice to the chutney and mix well.
6. Serve the Dhecha chilli chutney as a condiment with your favorite dishes.
