-12 spring roll wrappers

Instructions:

3. Add bean sprouts, cilantro and glass noodles. Mix well until all ingredients are well combined. Add salt and black pepper to taste.
4. In a small bowl, whisk together soy sauce and cornstarch. Pour over the vegetable mixture and stir well. Cook for additional 2-3 minutes until the mix turns a bit thicker.
5. Let the mixture cool down to room temperature.
6. Place the spring roll wrapper on a flat surface and add 1-2 tablespoon of the vegetable mixture on one side of the wrapper.
7. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly.
8. Repeat with the remaining wrappers and filling.
9. Preheat the air fryer or oven to 390F.
10. Brush or spray each spring roll with sesame oil.
11. Place the spring rolls in the air fryer basket or baking sheet and cook for 8-10 minutes until crispy and golden. Flip them halfway through cooking.
12. Serve hot with sweet chili sauce or soy sauce.
