Ingredients:
- 2 cups all-purpose flour
- 1/2 cup ghee or oil
- 1 cup khoya
- 1/2 cup grated coconut
- 1/2 cup powdered sugar
- 1/4 cup chopped almonds, pistachios, and cashews
- 1 tsp cardamom powder
- Oil for frying
- 1 cup sugar
- 1/2 cup water
- Saffron strands
Method:
1. In a large mixing bowl, add all-purpose flour and ghee or oil. Mix well until it resembles breadcrumbs.
2. Slowly add water and knead the dough until it becomes smooth and pliable. Cover it with a damp cloth and let it rest for 30 minutes.
3. In a pan, crumble khoya and cook on low heat until it turns light brown.
4. Add grated coconut, powdered sugar, chopped nuts, and cardamom powder to the khoya mixture. Mix well and let it cool.
5. Divide the dough into equal portions and roll them into small circles.
6. Place a spoonful of the khoya mixture in the center of each circle and fold it over to form a crescent shape. Seal the edges by pressing them together.
7. Heat oil in a deep frying pan and fry the gujiyas until they turn golden brown.
8. In another pan, add sugar, water, and saffron strands. Cook on low heat until the sugar dissolves and forms a syrup.
9. Dip the fried gujiyas in the sugar syrup and let them soak for a few minutes.
10. Serve hot or cold.
